Spinach and goats cheese pastry

Spinach and goats cheese pastryIngredients:

  • 1 onion
  • Spinach
  • Goats Cheese
  • Puff Pastry

Method:

  • In a large sauté pan heat olive oil and then sauté the onion for a few minutes. Add the spinach and cook until the spinach has wilted.
  • Remove from heat and set aside to cool.
  • Extend the puff pastry on a baking tray.
  • Spread the mixture over the pastry and add the goats cheese in crumbs.
  • Roll it up and cook it in the oven for 15 mins or until golden.
